The restaurant soft opened in May 2018 for Dinner, Tuesday through Saturday. Lunch service is being added August 14, 2018, Tuesday through Friday.

Family-owned Colorado Catch farms the Hybrid Striped Bass in Alamosa, CO and Frontier Trout Ranch farm the trout in Saguache, CO. The Monterrey Bay Aquarium SW has verified that MOC offers only seafood that is either green or yellow-rated by the MBA SW or eco-certified (by the Marine Stewardship Council).
